Shun Premier Kiritsuke kitchen knife limited edition and numbered 5555 pieces worldwide. It is a hybrid kitchen knife between a Santoku and a Chef, a work of art with a 20 cm blade and walnut laminated wood handle.


All knives have their serial number engraved on the ferrule of the handle. Its blades have the unmistakable hammered surface typical of the Shun Premier Tim Mälzer series, which also feature the brand's exclusive XI Anniversary logo and Tim Mälzer's signature.


Thanks to its impressive sharpness, it allows making cuts impossible for other knives, its balance and weight give it an agility and lightness never seen before, at the same time that it greatly facilitates the task, resulting in perfect finishes.


The XI Aniversario series knives are made with a new type of stainless damascened steel that has 32 layers. The blades are first hammered by hand with a technique known in Japan as "TSUCHIME". Its blade has a hardness of 61 (± 1) HRC.
