Global G-58 Chef's Knife, 16 cm (6 1/4") blade, made of CROMOVA Stainless Steel (Chrome Vanadium 18%) hardness 56-58 HRC. This is the traditional onion or chef's knife, used for most kitchen tasks, such as cutting meat or vegetables. Its blade is sharpened on both sides and is suitable for both right- and left-handed users.
Global knives caused a sensation when they burst onto the world culinary scene as an alternative to traditional European-style cutlery.
The blades are made of an alloy of stainless steel, molybdenum, and vanadium. The edge has a tapered edge that allows the knife to stay sharp. This makes them the sharpest high-carbon stainless steel knives available.
The edges are also ground at a sharper angle than traditional European-style knives and arrive factory-sharp. Although Global also makes a "heavyweight" line for chefs who prefer stronger knives, its original knives have thinner blades and are lighter than traditional European-style knives.
Global also dispenses with yokes on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand into a hollow handle blade. To ensure continuous balance, the sand flows into the handle as you use the knife.
There is a finger notch between the blade and the handle for safe handling.

- Global knives are manufactured in Niigata, Japan, and are renowned for their quality. In just a few years, they have gained a reputation among professional chefs and cooking enthusiasts.
- One of the main features of Global knives is their design; the entire knife is made of steel, making it easy to clean. The blade is made of stainless steel, CHROMA 18. Its high chromium content provides great resistance to rust and makes the blade very wear-resistant.

CARE AND USE
- Do not cut bones or frozen foods.
- Do not make sudden movements such as levers or twisting the blade.
- Do not cut with a vertical motion.
- It is recommended to clean the knife by hand using a damp kitchen cloth and mild soap. After rinsing the knife, it is advisable to dry it immediately with a dry towel or cloth.
- Do not wash the knife in the dishwasher. Firstly, because the edge can be damaged by contact with other objects inside. And secondly, because exposing the knife to extreme temperatures can be very damaging, especially for knives with a high carbon content.
- Do not use bleaching detergents under any circumstances.
- Do not wet the knife thoroughly during washing. And above all, do not place the knife in containers filled with water or bleach.
- Do not attempt to cut frozen foods or bones under any circumstances.
- Do not use the knife for any purpose other than food preparation. This includes, for example, levering or as a screwdriver.
- Do not use the knife on marble, stone, or glass surfaces.
