The stainless steel blade is made of a specially developed 32-layer Damascus steel and an extremely hard SG-2 core, resulting in a very sharp and long-lasting knife.

The special feature of this series is the mirror-finished Damascus blade that makes every Kaji an excellent optic. The riveted handle is made of a thin laminated Pakka wood that is comfortable to use for both left- and right-handed users due to its symmetrical shape.

Kaji represents the symbiosis of traditional art, cutting-edge technology and uncompromising elegance and is a highlight for ambitious amateur chefs and professionals.

The knife blade is forged from 32 layers of Damascus steel covered with an SG-2 steel core, resulting in a blade with a hardness of 64 ± 1 HRC, very durable and with a long-lasting sharpness. It is recommended to sharpen with a stone from the Shun line, Kai Shun 3000 or Kai Shun 1000 - 6000

Its elegant handle, made of oak and pakka laminate, fits perfectly in the hand thanks to its symmetrical shape. The integrated tang provides stability and balance.
