It is the smallest slicing knife of the three Yanagiba models available in the Kinju series, it is 18 cm long with a thin and narrow blade, ideal for fish or raw meat. Hexagonal handle made of reinforced laminated wood.

Satin blade made of high carbon steel with a hardness of approximately 58HRC, it is rectified on one side, which guarantees an optimal and straight cut. The maximum sharpness of the blade is achieved by high-precision processing of the edge.
